The SmartSlice Series systems slice fresh boneless subprimals to portion controlled weights. Whether uniform or irregularly shaped, the sub primal is placed on the infeed conveyor and scanned and multiple photos are taken every second. A comprehensive analysis of the sub primal is then made based on the input program provided by the operator. Once the sub primal has passed through the scanning area, the computer determines the optimum cutting pattern to minimize or eliminate any cutting loss in terms of yield based on your customer’s portion thickness specifications.
The SSV can slice accurately in four different cutting patterns within every sub primal and in its memory, the SSV holds up to fifty different programs with four different target weights in each. The accuracy of each portion is within typical NAMP specifications i.e. 2% standard deviation. The system can also produce upwards of 400 slices per minute! In other words, the system can produce in one hour what it takes five butchers to do in a day and generally, with improved portion accuracy and consistency.
